Heavenly Cocoa Crinkle Sandwich Cookies with Creamy Whipped Cocoa Filling.

These Cocoa Crinkle Sandwich Cookies are easy to assemble, but they look deliciously complicated!
Perfect for parties, gifts, get-togethers, or covered dish events - they are simply scrumptious.
Switch up the filling by subbing the melted chocolate chips & cocoa powder for something fruity, caramel, coffee, peanut butter or marshmallow flavored.

Cocoa Crinkle Sandwich Cookies
Ingredients:
Cookies:
1 3/4 Cups All Purpose Flour
1/2 Cup Cocoa Powder
1 teaspoon Baking Soda
1/2 teaspoon Salt
1/2 Cup Unsalted Butter (Softened)
1 1/4 Cups White Sugar
2 Eggs
2 teaspoons Vanilla Extract
1/4 Cup White or Powdered Sugar (To roll cookie dough balls in.) (Optional but recommended.)
Frosting:
2 1/2 Cups Powdered Sugar
1 Cup Unsalted Butter (Softened)
1/2 Cup Melted Chocolate Chips (Or flavor of choice, considering desired consistency.)
(If using another flavor, such as jam or coffee, add small amounts slowly until the desired consistency is reached.)
3 Tablespoons Whipping Cream
2 Tablespoons Cocoa Powder (Or extra powdered sugar if choosing another flavor.)
1 teaspoon Vanilla Extract
1/8 teaspoon Salt
Pro Tips:
TIP 1: Refrigerate dough before making dough balls.
TIP 2: Switch up the filling by subbing the melted chocolate chips & cocoa powder for something fruity, caramel, coffee, peanut butter or marshmallow flavored.
TIP 3: Use a piping bag to fill the cookie sandwiches.
TIP 4: You can change the appearance of the filling by using different piping tips.
TIP 5: Cookie Sandwiches must be stored in the refrigerator.
Directions:
For the cookies, whisk flour, cocoa powder, baking soda and salt together. In a separate bowl, beat the butter and white sugar until fluffy. Add the eggs & vanilla and beat until combined.
Stir flour mixture into egg mixture until just blended. Cover dough and refrigerate at least 2 hours.
Preheat oven to 350 degrees. Line cookie sheets with parchment paper. Shape dough into 1-inch balls or use a cookie scoop. Roll dough balls in white sugar. Place balls 2 inches apart on a parchment-lined cookie sheet and bake for approximately 12 minutes.
For the frosting, beat butter and powdered sugar until fluffy. Add in melted chocolate, whipping cream, cocoa powder, vanilla and salt. Beat until fluffy.
Once the cookies have cooled, use a piping bag or a spoon to fill the cookies and make sandwiches.
This single batch recipe makes approximately 20 cookie sandwiches.
Store in the refrigerator for up to 1 week.
